If you are anything like me, you have a difficult time putting together lunches like salads and cold sandwiches for work in the winter, because, let’s face it, it’s cold outside! There’s snow on the ground – who wants cold food? Well, here are a few recipes to mix it up .. they can be done warmed up (toasted) or cold (variety! The spice of life!) .. and you would be surprised how your anytime-fave sandwich tastes oh-so-different when you heat it up a little! Enjoy!

Healthy Lunch Recipes:
Pair these with a set of pre-toasted whole wheat slices of bread, and enjoy a light and healthy lunch that will fill you up and give you energy for the afternoon! I found good recipes for the egg and tuna salads made with Greek yogurt as a healthier alternative to mayonnaise.

With this recipe, I have to make mention .. (I am in LOVE with it, by the way) I did not use the ranch powder but garlic powder .. very delicious .. It has received honorable mention at my work! 🙂

Toasted Turkey and Hummus Sandwich
Toast 2 slices of whole wheat bread, line with 1 serving (2 tbsp total) of your favorite hummus (mine right now is Sabra’s Tuscan Herb .. their Roasted Red Pepper Hummus as well as their Roasted Garlic Hummus are both delicious as well!) .. 1 serving of Hillshire Farm’s Oven Roasted Deli Turkey, and 1 slice of thin Colby cheese .. package for lunch later or re-toast in the toaster oven for a warm, melty, delicious lunch now!
