I was doing meal prep for the week and decided I needed some variety in my breakfasts. A friend of mine revealed this simple recipe to me:
Egg Muffins
Ingredients:

- 8 eggs
- 1 package (16 oz) frozen broccoli
- cooking spray
- 1/4 tsp sea salt
- 1/2 tsp black pepper
Directions:
Preheat oven to 350 F.
Line muffin pan (12 count) with cooking spray of choice (I recommend olive oil-based spray) OR with paper liners. In medium saucepan, heat broccoli (no oil or water required, it will simmer in the water that melts from the ice). Cook on medium-high for 10 minutes. In medium bowl, beat eggs well. Add salt and pepper. Add broccoli. Mix well. Spoon into muffin cups.
Bake at 350 F for 18-20 minutes.

These little muffins are great for on the go! Don’t have time to cook breakfast? Package 2 at a time in sandwich or snack baggies and grab them before heading out the door in the morning! Tasty either warm or cold.
Get creative and add anything you like – green and red peppers, onions, mushrooms, a little bit of cheese, etc! Have fun! Enjoy!
